Position Overview


The Biogeoscience Institute in VP Research is currently seeking a Full-time Regular Executive Chef.


This position reports to the Field Research Manager at the Biogeoscience Institute (BGI), located at the Barrier Lake Field Station in Kananaskis. As Executive Chef, your key purpose includes responsibility for healthy food preparation and dining services, in a timely manner for groups ranging from 15 to 100 participants. You will provide in-scope supervision and coordinate food services staff and ensure all kitchen and dining areas are clean and safe at all times. You will participate in planning meetings and review group information with staff for kitchen/dining services required by each group. As well, you will order food and beverage supplies. You will interact with customers and arrange menu selection for food allergies, restrictions or other requests. You will develop standard recipes and techniques for food preparation. Your qualifications include experience and considerable knowledge of organization and procedures common to large-scale food preparation and services. You will have experience and knowledge of purchasing and procedures related to meats, fresh produce, dry stores, supplies and equipment required for kitchen/dining operations, including monitoring of food and labour costs. In addition, you will have experience and knowledge of food storage, food value and nutrition, ethnic foods, and production with minimum wastage and experience in supervision and instruction of kitchen/dining service staff.


The Executive Chef is responsible for the management of a large kitchen and dining area and assumes full responsibility of the kitchen and food service area. The position oversees and co-ordinates all food preparation and food services in the kitchen along with staff training, mentoring and scheduling. Other responsibilities include ordering of food supplies, managing food costs, catering to a variety of dietary restrictions, special functions, and receiving food orders. The role ensures kitchen safety, efficient food production and cleanliness for a busy kitchen and dining area. Daily duties include: cooking and preparing meals, preparing food trays, cleaning and peeling vegetables, preparing salads, making cookies and laying out materials for bag lunches. The executive chef is responsible for the cleanliness of all ovens and stoves, floors, refrigeration units, dry cupboards and overall cleanliness of the kitchen. You will be responsible to ensure that annual and semi-annual major cleaning and maintenance of all appliances is performed by a professional, in coordination with the Facility Maintenance Operator.


This position is located in Kananaskis.

Position Description

Summary of Key Responsibilities (job functions include but are not limited to):

  • Ensuring all menus are planned and prioritized appropriately based on requirements and dietary restrictions.

  • Assisting with safe, efficient food production and cleanliness for a busy kitchen and dining area.

  • Orders necessary food supplies, track and minimize costs.

  • Cooks or directly supervises the cooking of items that require skillful preparation.

  • Solicit guest feedback to improve food and presentation quality and investigate customer complaints.

  • Works closely with BGI staff to coordinate groups booked and special requirements.

  • Schedules and coordinates the kitchen employees in a timely manner.

  • Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.

  • Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.

  • Excellent personal hygiene, attire and grooming.

  • Ability to accept constructive criticism.

  • Must be dependable and punctual and able to manage own time and assignments.

  • Fully train all kitchen staff and In-scope supervision to all kitchen staff will be required.

  • Support safe work habits and a safe working environment at all times.

  • This position will assist with the interviewing and selection process for all kitchen staff.


Qualifications / Requirements:

  • Considerable knowledge of the organization and procedures common to the food service industry.

  • Red Seal Certification is required and a minimum of five years related experience.

  • Considerable knowledge of purchasing specifications and procedures related to meats, fresh produce, food storage procedures, supplies and equipment operation.

  • Considerable knowledge of food value and nutrition.

  • Ability to maintain required production with minimum wastage.

  • Ability to supervise, mentor, and train sous chefs, chef assistants and food services workers.

  • Working computer software knowledge such as Word and Excel.

  • Strong communicate skills, flexible work hours, independently driven and punctuality are necessary. 

  • Act professionally, pleasant and courteous at all times.
